Bacon, Tomato, and Arugula Pizza

I wasn’t sure I was going to sell NavyGuy on this recipe, but highlighting the bacon aspect first helped drastically.

The recipe is from Cooking Light magazine – here is the original version.  I opted for a Biboli original crust to speed up the process (which meant I could also omit the cornmeal).  I cooked it for 12 minutes, and then turned on the oven broiler to brown the cheese a bit before adding the arugula on top.  I’m not sure really how much healthier this would be compared to our typical Sunday night pizza dinner, but it was definitely a tasty change… and despite NavyGuy’s reservations about the “green smelly stuff”… he declared it a keeper 🙂

It was a great week in Wisconsin.  Gained a new godson, visited friends and family, helped Mom sort boxes of family photos, and ate a load of fabulous food.  Another busy week ahead, with meetings, bowling, sitting jobs, maybe a road trip, and then a Super Bowl party with squadron folk.  2012 is flying!  What have you been up to?
