Pasta Carbonara

1 box bucatini pasta (it looks like really think spaghetti) or linguine noodles
2 bunches green onions, chopped
1 red pepper, chopped
6 oz pancetta and/or bacon, cut up into bite-size pieces
Olive Oil
2 eggs, beaten
1/2 cup parmesan

Cook pancetta/bacon in skillet.
Remove from skillet and wipe skillet (or just move on to a new skillet).
Heat 2 tbsp olive oil in skillet, add green onions and red pepper. Cook until softened, about 3 minutes. Remove from heat.
Cook pasta (you can do this simultaneously to the other steps, but it’s slightly more challenging), drain.
Dump hot pasta back into its pot, and add the beaten eggs. Stir it up with the bacon and veggies; the eggs may curdle somewhat, which is fine/good.
Stir in the parmesan.
