Baked Pork Chops

oil or lard
4-6 bone-in pork chops
1 egg, beaten
bread crumbs
salt and pepper

1 large onion, sliced

1 can tomato soup
1 can water
1. Preheat oven to 350 degrees.
2. Prepare for breading by putting beaten egg in a shallow dish or plate.  Toss salt and pepper with bread crumbs in a second dish. (I know you wanted specific amounts, but I really don’t know.  I usually don’t use any salt and probably 1/2 cup of crumbs? Start with less, you can always add more, but what you don’t use is garbage.)
3. Heat oil or lard in a frying pan.  When hot, dip pork chops in egg then breading and place in frying pan.  Cook 4-6 minutes per side until browned.
4. Place in a casserole dish (or two).  Top chops with sliced onion.
5. Mix together tomato soup and water and pour over chops.
6. Cover and bake for an hour and a half.
7. Remove cover and bake for an additional half hour.
I could eat these onions all day long!  So delicious and the pork is very tender.  For a few variations, you can use different soups. I’ve done it with golden onion soup and my mom has tried cream of celery and cream of chicken.  You can also leave off the breading and simply sear the chops in the frying pan with out it.
